So far, today has been the best day I've had in a long, long time. It's mainly because I have a good attitude today, and the fact that I worked out and got a vanilla latte before class could have something to do with it as well. Also, I started reading a really inspirational book today that the church I go to suggested us to read (and that I was actually given by them). So all of those factors combined, along with my research topic of 'the mechanism by which fluoride prevents dental caries and the prevalence world-wide' being approved, have made today great.
I wanted to go somewhere for lunch, but instead I reminded myself of all the food I have in my apartment right now, so I headed home to make stir fry.
So I made the stir fry, and ate a TON of fruit too (banana, mandarin orange, strawberries, and blackberries)!
The stir fry consisted of:
-Whole grain rice
-Soy sauce
-Zucchini & squash (the only vegetables I have right now)
-Extra firm tofu
As I was cooking the rice, I cut up the zucchini, squash and tofu, and began to saute them in the pan with the soy sauce for 10 minutes, on medium heat. Once the rice was done, I added it to the mix and cooked on medium heat for 5 more minutes.
It was a filling and healthy lunch!
Now I'm watching Anthony Bourdain travel in Uzbekistan, and wishing I could have his job! (Uzbekistan is an Islamic country in central Asia, which used to be under Russian rule and is located a few countries under it). Anyway, I love traveling and besides health it's the main thing I am very interested in, and I hope to do a lot of travel in the future.
