First of all, what's a pierogi?
It's a dumpling filled with various things- sometimes potato & onions, sometimes spinach and feta cheese, and there are several other kinds. They are usually boiled, fried or sauted in oil or butter, and they are relatively low in fat (despite the oil & butter). Pierogis originate from Poland, which makes sense to me, because I have been to an eastern European country, Lithuania, and dumplings and potatoes are major staple foods there.
Pierogis can be bought at your local grocery store- I bought mine at Publix, and three of them have only 3.5 grams of fat.
I sauted my spinach and feta pierogies in 1 tablespoon olive oil, with half of a large tomato, snap peas, broccoli, spinach, and a little bit of hot sauce, for ten minutes on medium heat.
They turned out delicious! So flavorful because of the tomatoes and the little bit of hot sauce.
I also decided to have a soy milk smoothie, since I needed a little extra protein and I always crave smoothies after I work out, which I had done before cooking...
My smoothie had...
-1 cup reduced-fat soy milk
-5 strawberries
-half a cup of blueberries
-half a banana
-ice
Yum.
Very satisfied with my dinner choice!
