Lunch today:
Asian Veggie Sandwich with half a green apple and a sweet potato :)
Random, I know. But actually, it was a really good combo! This was the first time I had ever cooked a sweet potato, and I was surprised at how easy it was. I poked holes all over the potato, and microwaved it for 5 minutes. That was it!
My veggie sandwich consisted of 5 grain bread from Publix, a Morningstar Asian veggie patty, and bean sprouts.
I added some healthy smart balance butter to my sweet potato, about a teaspoon, and it was great!
I was very impressed with this lunch. Sometimes I will make these super healthy dishes and don't end up liking them but eat them anyway (but I don't ever post them on here, and don't make them again!) It kept me full and I didn't even have to eat a snack before my work out 2 1/2 hours later.
Take note that this meal is vegan well, minus the smart balance. I have been cooking quite a few vegan meals this week, but I decided to not do it the entire week... I didn't feel ready for that. But this is good practice! When I do decide to have a full vegan week, I can make this meal again and just not add the butter!
